Capsicum Gojju

For Paste:
Frozen coconut1/2 cupThaw
Green chillies5-6
Garlic1 clovebig
Dry roast:
Coriander seeds1 Tbsp
Cumin1/2 tsp
Cloves1-2
Cinnamon1/2 inch
Urad dal1.5 Tbsp

Method:
  1. Chop onion and capsicum into large squares
  2. Dry roast the Urad dal and the dry spices
  3. Grind the spice mix with coconut, garlic, chillies and water to a smooth paste
  4. Fry onion and capsicum with a little oil and salt
  5. Add the paste, water, tamarind, sugar and stir till it thickens
  6. Adjust salt, tamarind and sugar to taste
  7. Garnish with seasoning and cilantro 
Options:
  • Replace tamarind with vinegar/lemon juice to keep the colour bright
  • Replace capsicum with other veggies
