Indian seasoning
Tamarind pasteto taste
Vangi bath powderto taste


Method:
  1. Add the eggplant, salt & onion to seasoning and cook with closed lid till tender
  2. Add tomatoes, peppers and cook for 2 minutes
  3. Add the rice, salt, powder and tamarind paste; mix well
  4. Garnish with cilantro and serve hot
