Coconut Curried Zuchini

Onion1 largechopped
Zucchini1 mediumchopped
Cauliflower1 cupchopped
Carrot1chopped
Beans1 cupchopped
Garlic3 clovesminced
Gingersmall pieceminced
Coconut milk1 cup
Coriander powder1 tsp
Cumin powder1 tsp
Saltto taste

Method:
  1. Fry onions, ginger, garlic for 5 minutes on medium heat
  2. Add vegetables and spices, cook for 15 minutes
  3. Add coconut milk and cook till vegetables are tender
  4. Serve in a bowl on a bed of quinoa/rice
