Baked Gnocchi

Serves: 4

Gnocchi1 lbcooked in boiling water
Onion1 largechopped
Zuchini2 mediumquartered and sliced
Tomato2 mediumchopped
Mushrooms8-10 ozsliced
Basil/Parsley/Oreganofew
Garlic2 clovesminced
Mozarella cheeseas needed
Saltto taste


Method:
  1. Fry onions and garlic for 5 minutes
  2. Add zuchini, tomatoes, herbs and salt and cover with lid till everything combines; reduce heat
  3. Add the gnocchi and stir carefully until heated through
  4. Ladle half the gnocchi into a bowl and then add a layer of the cheese
  5. Repeat with rest of the mixture and top with more cheese
  6. Bake in oven at 350F for 30 minutes until cheese turns brown


Notes:
Cook the gnocchi in batches, a double handful at a time. When the pieces float on top, they're done. If you empty the entire package in one go, the temperature of the water will drop and individual pieces will be unevenly cooked. Take care not to overcook the zuchini, they should be slightly crispy when put into oven.
