Apple Muffins

Makes: 12-14 muffins 
Calories: 350/muffin
IngredientQtyPrep
Sugar1 cup
Vegetable oil1 cup
Flax seeds3 tbspground fine
Cold water9 tbsp
Flour2 cups
Apples3 cupschopped
Cinnamon powder1 tsp
Baking soda1 tsp
Vanilla essence1 tsp
Salt1/2 tsp

Method:
  1. Mix the cold water with flax meal and refrigerate for at least 20 minutes
  2. Mix sugar, oil and flax meal for 1 minute
  3. Add the dry ingredients; beat 1 more minute and add the apples 
  4. Pour into a pan or muffin tray and cook for 20-30 minutes at 350F, until a toothpick comes out clean

Thank you! I thought the recipe might be useful for vegans and those who don't have eggs on hand regularly. Sometimes even unsalted butter can be difficult to get so this recipe is an easy/quick alternative!
