Sauerkraut

Serves: 6-8

Purple cabbage1/2 headshredded
Salt3/4 tbsp
Caraway seeds1/2 tbspoptional

Method:
  1. Rub salt on shredded cabbage until it becomes soft and releases water
  2. Keep pressing down on the cabbage so that water rises to the top
  3. Add caraway seeds
  4. Leave the mixture at room temperature for 3 to 4 days until it tastes right
