Eggplant Chutney

Eggplant1 mediumchopped, steamed
Green chilis3-4 smallsteamed
Onion1 medium/small
For the paste:
Coconut1/2 cup
Cilantrofew
Tamarind paste4 tbsp
Brown sugar2 tsp
Saltto taste
Green chilissteamed

Method:
  1. Blend coconut, green chilis, tamarind paste, brown sugar, cilantro and salt smoothly
  2. Add raw onion and steamed eggplant and pulse till roughly combined
