Potato Salad

Serves: 4 as a side

Red potatoes2 lbs4-5 medium
Celery3 ribschopped
Green onion1 bunchchopped
Parsley1/4 cupchopped
Mayo3/4 - 1 cup
Mustard1 tbsp
Saltto taste
Pepperto taste
Oil1 - 2 tsp
Vinegar1 - 2 tsp

Method:
  1. Chop potatoes into small pieces and start cooking in cold water with 1 tsp salt
  2. Cook potatoes on medium heat without cover for 10 - 15 minutes until completely done
  3. Drain and keep aside
  4. Make vinaigrette with oil, vinegar, salt and pepper
  5. Toss potatoes while still hot in a mixing bowl
  6. Add the other ingredients, adjust seasoning and refrigerate for an hour at least
