Red Pepper Pesto Pasta

Red peppers2 lbs4-6 large
Garlic3 cloves
Sunflower seeds2 tbsptoasted
Walnuts1/4 cuptoasted
Asiago cheese1/2 cup gratedsub parmigiano
Parsley1/2 cupchopped
Paprika1 tsp
Cayenne pepper1/4 tsp
Lemon juice2 tsp
Saltto taste
Olive oil1/2 - 2/3 cups


Method:
  1. Roast red pepper in broiler until charred, about 15 minutes
  2. Place in closed bowl for 15 minutes and then peel the skin
  3. Blend with all other ingredients, adjust oil, seasoning and salt to taste
