Vegan Brownies

Makes: 15-16 small brownies

Vegan butter1/2 cup1 stick
Sugar3/4 cup
Flax eggs2 tbsp flaxmeal + 6 tbsp water
Vanilla extract1 tsp
Cocoa powder1/2 cupdutch processed
Salt1/4 tsp
Baking powder3/4 tsp
Flour3/4 cup
Chocolate chips1/3 cupor walnuts

Method:
  1. Melt butter in microwave
  2. Add baking powder, salt, flax eggs, vanilla extract, sugar, cocoa powder and whisk well
  3. Mix flour and add-ins like chocolate chips or walnuts
  4. Scoop into small muffin tray, greased with cooking spray
  5. Preheat oven to 350C and cook for 18-22 minutes
  6. Cooking time depends on oven. Keep checking after 15 minutes to ensure brownies do not become crisp/crumbly. Toothpick should come out clean.
