Banana Nut Bread


Makes: 2 Loaves

Butter1.5 cups / 3 Sticksmicrowave on low (4) for 2-3 min
Sugar3 cups
Eggs6
Bananas3 cups (5-6 no.)mashed
Flour3 cups
Baking soda1 tbsp
Cinnamon powder1 tbsp
Vanilla extract1.5 tsp
Salt1.5 tsp
Pecans1.5 cupschopped

Method:
  1. Melt the butter and mix with sugar with a whisk/beater
  2. Add eggs and mix (2 at a time)
  3. Add mashed bananas, salt, baking soda, cinnamon and mix
  4. Sieve the flour and mix (1 cup at a time)
  5. Stir in the chopped pecans with a spatula
  6. Grease 2 bread pans and pour the mixture
  7. Bake at 350F for 60-70 min
  8. Push a toothpick at the center and if it comes out clean, it's done
Notes:
Optional: Add nuts on top at 40 min mark, otherwise they'll sink to the bottom
