Jungle Curry

Noodles4 roundscooked
Green onion1 bunch
Red chili1 - 2 mediumchopped
Garlic3 clovesminced
Ginger1 inchminced
Mushrooms1/2 lbchopped
Red pepper1 largesliced
Broccoli1 mediumchopped
Spinachhandfulchopped
Cilantrofew stalkschopped
Coconut milk15 oz can
For Sauce:
Water150 mlhot
Almond butter3 tbsp
Soy sauce2 tbsp
Maple syrup1 tbsp
Curry powder2 tbsp
Lemon1 mediumhalf for sauce


Method:
  1. Fry onions, ginger, garlic and red chili for few minutes
  2. Add mushrooms and red pepper
  3. Add coconut milk after 5 minutes, let cook for some time and add the sauce
  4. Now add the broccoli and wait until all vegetables are cooked
  5. Add noodles, spinach and garnish with cilantro
  6. Turn off heat and let stand for few minutes before serving
