Salsa Verde

Serves: 4-5

Tomatillos1 poundhusked and chopped
Onion1rough chop
Garlic3 clovespeeled & smashed
Jalapeno1-2rough chop
Cumin seeds2 tspfine dice
Saltto taste
Sugarto taste
Lemon juiceto taste

  1. In a large saucepan cover the tomatillos, onion, garlic, and jalapeño with water. 
  2. Bring to a boil and simmer until the tomatillos lose their bright green color.
  3. Toast the cumin seeds over low heat, then grind to powder.
  4. Grind all ingredients in blender after cooling.
  5. Season the salsa with salt and serve chilled.
