Enchilada Noodles

Serves: 4 

Spaghetti1 lbcooked in saltwater
Enchilada sauce2 cupsuse the leftovers from Enchilada Casserole
Pinto beans3/4 cupleftover beans from Enchilada Casserole
Sweetcorn1 cup
Spring onion4-5 stalkschopped
Saltto taste
Black pepperto taste
Red chili flakesto tasteoptional

  1. Cook the sauce, beans and sweet corn in a pan until warm
  2. Add salt, pepper, red chili flakes and pasta and mix well
  3. Serve topped with chopped spring onion
