Szechaun Eggplant

Eggplant2 mediumchopped
Onion2 mediumjulienne
Garlic2 medium clovesminced
Red chili flakesto taste
Sriracha sauceto taste
Saltto taste
For sauce:
Soy sauce4 tbsp
Brown sugar1 tsp
Vinegar2 tsp
Corn starch2 tsp
Water2 cups
Pepperto tastemix everything

  1. Fry eggplant on high heat with little salt and pepper until browned, set aside
  2. Fry onion & garlic with red chili flakes and sriracha sauce until soft
  3. Add szechuan sauce and cook till it bubbles
  4. Add the eggplant and toss until the pieces are coated with the sauce
  5. Garnish with cilantro and serve with fried rice, couscous or as an appetizer
