Creamy Pasta Alfredo

Cannelini beans1 cupdry
Pasta1 lbcooked
Olive oil2 tbsp
Mushrooms3/4-1 lbsliced
Broccoli1 largechopped
Onion1 largechopped
Garlic2 clovesminced
Saltto taste
Pepperto taste
Red chili flakesto taste
Oregano/Parsleyto taste

  1. Soak the dry beans for about 8 hours with some salt
  2. Pressure cook the beans for 3 whistles with aromatics like onion, garlic, carrot or celery
  3. Fry the minced garlic and onion in a pan and puree with the beans in a blender
  4. Fry mushrooms and broccoli until cooked, add the pasta and bean sauce
  5. Season with salt, pepper and red chili flakes to taste
  6. Serve hot (the sauce will dry out when it becomes cold. Add water when reheating)
