Vegan Mac & Cheese

Pasta1 lbcooked
Potato2 mediumchopped
Carrot2 mediumchopped
Yellow onion1 mediumchopped
Cashews1/2 cups
Coconut milk1/4 cups
Water3/4 cupuse from boiled vegetables
Nutritional yeast2 tbspoptional
Lemon juice1 tbsp
Garlic powder1/4 tsp
Cayenne pepperto taste
Smoked paprikato taste
Saltto taste

  1. Boil water and cook the vegetables until soft
  2. Blend the vegetables, cashews, coconut milk, spices, salt and water to saucy consistency
  3. Pour over pasta in a baking dish and cook for 15 minutes at 350° F or until browned
  4. Garnish with fresh parsley and hot sauce
