Spanish Lentil Stew

Garlic4 clovesminced

Potato2 mediumdiced, steamed
Carrot2 - 3 largegrated
Beetroot1 largegrated
Chorizo1 packet
Lentils1 cup
Diced tomatoes28 oz
Stock3 cups
Red chili1 - 2 mediumchopped
Bay leaves4 medium
Smoked paprika1/2 tspadjust to taste
Saltto taste
Pepperto taste
Soy sauce2 tbsp

  1. Fry garlic, onion, red chili and chorizo for few minutes
  2. Add carrots and beetroot, cook for 5 minutes
  3. Add the tomatoes, stock, lentils and potatoes along with spices
  4. Cook on low heat until lentils are fully done (about 20 - 30 minutes)
