Mushroom Carbonara

Spaghetti1 lbbroken
Mushrooms1 lbchopped
Stock1 cup
Water2.5 - 3 cups
Milk3.5 - 4 cups
Saltto taste
Onion1 largechopped
Garlic3 large clovesminced
Chili flakes1/2 tsp or more
Thymeto taste
Lemon juiceto taste
Hot saucefor garnish
Olive oil2 tbsp

  1. Fry onion and garlic in olive oil until browned
  2. Add mushrooms and toss until cooked
  3. Add milk, stock, water, thyme and broken pasta
  4. Cover with lid on high heat until sauce begins to boil
  5. Remove lid, reduce heat and stir constantly to avoid sticking
  6. Keep stirring until sauce thickens and pasta is cooked
  7. Adjust salt and garnish with hot sauce before serving
