Chickpeas1/2 lbdry
Onion1 largechopped
Parsley1/2 cupchopped
Cilantro1/4 cupchopped
Garlic4 - 5 cloves
Chickpea flour1.5 tbsp
Cumin powder2 tsp
Coriander powder1 tsp
Salt1.5 tsp
Black pepper1/4 tsp
Cayenne pepper1/4 tsp
Cardamompinchgrind to powder

  1. Soak chickpeas overnight, drain and rinse well
  2. Pour all ingredients into food processor and pulse till you get a coarse meal. Do not add any water
  3. Cover the bowl and refrigerate for 1 - 2 hours
  4. Make into balls or slightly flat vadas and fry on medium heat. Each falafel should take between 5 - 6 minutes to brown evenly
  5. Drain on paper towels and stuff them into pita pockets
