Method:
- Chop onion and capsicum into large squares
- Dry roast the Urad dal and the dry spices
- Grind the spice mix with coconut, garlic, chillies and water to a smooth paste
- Fry onion and capsicum with a little oil and salt
- Add the paste, water, tamarind, sugar and stir till it thickens
- Adjust salt, tamarind and sugar to taste
- Garnish with seasoning and cilantro
Options:
- Replace tamarind with vinegar/lemon juice to keep the colour bright
- Replace capsicum with other veggies
