Pasta water | 2 cups | reserve |
Red chili powder | to taste | |
Croutons | few | |
Dhanialu podi | 2 tbsp or more | madras version |
Tomato sauce | to taste | hot n sweet |
Mint & cilantro | for garnish | finely chopped |
Method:
- Microwave potatoes until almost done
- Fry onion and tomato, then add potatoes
- Add spice powders and sauce, mix well
- Add reserved pasta water (as needed), then stir in croutons and adjust salt/spices to taste
- Mix pasta and garnish with herbs
Notes:
Can use 1 box of tofu instead of potato. Drain for 30 minutes, chop and toss with cornflour. Fry until puffed and golden. Toss with ketchup and coriander powder, add to pasta with croutons.
