| Pasta | 1 lb | cooked |
| Paneer | 400g | cubed |
| Tomato | 1 lb | chopped |
| Onion | 1 lb | chopped |
| Salt | to taste | |
| Pasta water | 2 cups | reserve |
| Red chili powder | to taste | |
| Croutons | few | |
| Dhanialu podi | 2 tbsp or more | madras version |
| Tomato sauce | to taste | hot n sweet |
| Mint & cilantro | for garnish | finely chopped |
Method:
- Fry onion and tomato until well done, then add paneer
- Add spice powders and sauce, mix well
- Add reserved pasta water (as needed), then stir in croutons and adjust salt/spices to taste
- Mix pasta and garnish with herbs
