Vankayi Chutney

Serves 4

Eggplant250gchop
Green chilis3-4 smallsteamed
Sweet onion1 smallchopped
For paste:
Coconut1/2 cup
Cilantrofew
Tamarind paste4 tbsp
Brown sugar2 tsp
Saltto taste
Water        as needed

Method:
  1. Chop the eggplant and steam in the microwave until well done 
  2. Blend coconut, green chilis, tamarind paste, brown sugar, cilantro, and salt smoothly
  3. Add steamed eggplant and pulse till roughly combined, adjust salt to taste
  4. Mix the finely chopped onion and garnish with Indian seasoning
