Sweet onion | 1 small | chopped |

Coconut | 1/2 cup | |
Cilantro | few | |
Tamarind paste | 4 tbsp | |
Brown sugar | 2 tsp | |
Salt | to taste | |
Water | as needed |
Method:
- Chop the eggplant and steam in the microwave until well done
- Blend coconut, green chilis, tamarind paste, brown sugar, cilantro, and salt smoothly
- Add steamed eggplant and pulse till roughly combined, adjust salt to taste
- Mix the finely chopped onion and garnish with Indian seasoning
