Method:
- Soak chickpeas overnight and pressure cook for 3 whistles with salt
- Fry onion until browned, then add add tomatoes
- After tomatoes break down, add ginger garlic and tomato paste
- Fry until well cooked
- Add salt and all spices and cook for another 5-10 minutes
- Add water and drained chickpeas to pan and simmer on medium heat
- When desired consistency is reached, mash a few chickpeas in the pan
- Adjust seasoning to taste and garnish with cilantro leaves
