Miso Roasted Potatoes

Serves: 3

Sweet potato3 mediumcut in wedges
Sesame oil1 tbsp
Maple syrup2 tsp
Miso2 tsp
Sambal olek2 tsp
Ginger1 tspgrated
Method:
  • Mix marinade ingredients and toss wedges in large bowl
  • Microwave for 3 minutes
  • Spread on parchment paper and bake for 35 - 45 minutes, flipping once in between
  • Broil for 2 - 3 minutes for crispier wedges
  • Serve with Sambal Tahini Mayo
Notes:
Sub regular yukon gold potatoes if needed
