Kothimeera Vankayi

Serves: 4

Eggplant8 - 12 largechopped
Onion1 largechopped
Diced tomatoes15 oz can
For paste
Cilantro1/2 bunch
Garlic5 - 6 medium
Green chili3 - 4to taste
Method:
  • Fry eggplant with salt in oil until half cooked
  • Add onion, cook until well done and then add diced tomatoes
  • Stir until tomatoes are done and turn off heat
  • Add cilantro paste and stir until combined
Notes:
Alternate version: use mint and garlic, cilantro and ginger. Coriander powder, optional
