Coleslaw

Serves: 4

Red onion2 largeshred finely
Sugar2/3 cups
Table salt1/4 cup
Dressing:
Mayo1/2 cup
Vinegar2 tbsp
Mustard1 tbspmore to taste
Black pepper2/3 tbspfresh ground
Sugar2 tbspor less

Method:
  • Combine cabbage, onion and carrot in a large bowl, leaving plenty of room to toss.
  • Sprinkle with sugar and salt and toss to combine. 
  • Let rest 5 minutes, then transfer to a large colander and rinse thoroughly under cold running water.
  • Transfer to a large kitchen towel and blot mixture dry with another towel. Return to large bowl and set aside.
  • Combine mayonnaise, vinegar, mustard, black pepper, and sugar in a medium bowl and whisk until homogeneous.
  • Pour dressing over cabbage mixture and toss to coat. Taste and adjust seasoning with more salt, pepper, and sugar if desired.
