Egg Yolk Dressing

Makes: 4 - 6 salad servings

Egg yolks6 mediumhard boiled
Sugar1 tbspadjust to taste
Vegan fish sauce2 tbsp
Lime juice1/4 cupadjust to taste
Pepper1 tsp
Garlic1 clove
Saltto taste
Herbs of choiceas neededbasil, oregano
Mayo2 tbspas needed

Method:
  • Blend all the ingredients except mayo until the garlic and herbs are fully incorporated
  • Transfer the dressing to a glass bottle and whisk in the mayo
  • Keep in the fridge for up to 4 days
