Serves: 4-6
Method:
- Bring a big pot of water to boil and add some hot water to the cashews to let them soak
- Add spinach and once the leaves wilt, transfer the spinach to an ice bath
- Once the spinach cools, blend it with the rest of the gravy ingredients
- Heat oil in a pan and add bay leaves, cumin and turmeric
- Once they brown a bit, add onions and cook for 3-4 min before adding salt & grated garlic
- Deglaze with a bit of water and cook for another 3-4 min
- Add the blended spinach and coriander powder and bring to boil
- Adjust salt and add cubed paneer and cook till raw smell goes away
- Add garam masala, kasuri methi and lemon juice if necessary
