Palak Paneer

 Serves: 4-6

Spinach10ozblanch
Cashews1/2 cupsoak
Tomatoes14oz can
Garlic2 cloves
Ginger1.5 inch
Green chillies4-5

Method:
  • Bring a big pot of water to boil and add some hot water to the cashews to let them soak
  • Add spinach and once the leaves wilt, transfer the spinach to an ice bath
  • Once the spinach cools, blend it with the rest of the gravy ingredients
  • Heat oil in a pan and add bay leaves, cumin and turmeric
  • Once they brown a bit, add onions and cook for 3-4 min before adding salt & grated garlic
  • Deglaze with a bit of water and cook for another 3-4 min
  • Add the blended spinach and coriander powder and bring to boil
  • Adjust salt and add cubed paneer and cook till raw smell goes away
  • Add garam masala, kasuri methi and lemon juice if necessary
