Chili Oil Cucumber Salad

Cucumber1 mediumchopped
Roasted peanuts1/4 cupchopped
Dressing
Peanut butter3 tbsp
Soy sauce1 tbsp
Lime juice1/2 medium
Agave syrup1 tsp
garlic powder3/4 tsp
Water1 tbsp
Garnish
Sesame seeds1 tbsp
Cilantro1/4 cupchopped
Chili oilto taste

Method:
  • Chop the cucumber into bite sized pieces or wedges as preferred
  • Toss with little salt and set to drain in a colander over a bowl for 10 minutes
  • Mix the dressing ingredients and set aside
  • Once the cucumbers release water, mix the dressing with the cucumbers and roasted peanuts
  • Serve in 2 bowl and garnish with sesame seeds, cilantro, and chili oil and serve
