Lemon Rice

Serves: 4

Rice1.5 cupscooked and cooled
Onion1 largechopped
Green chilies5-6 mediumminced
Lemon juiceto taste
Cilantrofew stalksminced
Saltto taste
Indian seasoningpeanuts optional
Curry leavesto tastechopped

Method:
  1. Fry green chilies and curry leaves with seasoning
  2. Add onion and cook for 2 to 3 minutes until transparent
  3. Add rice, salt and mix well
  4. Garnish with lemon juice and cilantro, adjust to taste
