One Pot Jambalaya

Serves: 6 
Vegan sausages4 chipotlechopped
Short grain rice1.5 cups
Celery3 stalkschopped
Bell pepper2 largechopped
Onion1 yellowchopped
Garlic4 clovesminced
Hot sauce1 tbsp
Oil1 tbsp
Crushed tomatoes14 oz
Vegetable stock3 cups
Coconut sugar2 tsp
Cajun seasoning1.5 tbsp
Cayenne pepper1 tsp
Smoked paprika1 tsp
Saltto taste
Thyme1 tspdried
  • Fry onions, bell peppers, garlic and celery for five minutes
  • Add Cajun seasoning, smoked paprika, cayenne pepper, thyme, crushed tomatoes, hot sauce and vegan sausages
  • After the tomatoes start to simmer, and rice, stock, coconut sugar, salt and pepper to taste
  • Cover with lid and simmer on extremely low heat for 40 minutes
  • Garnish with chopped fresh parsley
