Avocado Beans on Toast

Serves: 2 (dinner) or 4 (snack)

For bean spread
Cannelini beans1 cansub butter/white
Maple syrup1 tsp
Black pepper1/4 tsp
Onion powder1/2 tsp
Garlic powder1/2 tsp
Chipotle sauce1.5 tbsp
Salt1/2 tspgrind to paste

Method:
  • Grind the beans and spices into a paste, it's ok if a few beans show through
  • Toast the bread until crispy
  • Toast the corn with little oil until it has golden brown spots
  • Spread the bean paste, garnish with avocado, chili flakes, corn, sesame, and green onion/shredded cheese


Notes:
Try to use hearty bread like rye or sourdough that will stay crispy. Can add sweet onion, chips, or tortilla strips for crunch.
