| Red potatoes | 1.5 lbs | chopped |
| Chorizo | 12 oz | TJ's |
| Onion | 1 large | chopped |
| Canola oil | 2 tbsp | |
| Chipotle mayo | as needed | |
| Garlic powder | to taste | |
| Green onion | 1/2 bunch | sliced thinly |
| BAM spice | to taste | |
| Yellow pepper | 2 medium | chopped |
| Cheddar cheese | to taste | shredded |
Method:
- Toss potatoes with salt and garlic powder and microwave for 5 - 7 minutes
- Toss with oil and bake for 20-25 minutes at 400 F and broil for 3 - 4 minutes (do not toss/flip in between)
- In the meantime, fry onion for 5 minutes
- Add chorizo and cook until the mixture changes color; add peppers and BAM spice
- Make Chipotle mayo
- Fill tacos with chorizo mix, top with Chipotle aioli, and garnish with green onion and cheese
Notes:
Salt only needed only for potatoes. There's enough salt in chorizo and mayo for the rest of the dish.
