Chorizo Tacos

Serves: 4 
Calories: 550/serving (not including tortillas)
Red potatoes1.5 lbschopped
Chorizo12 ozTJ's
Onion1 largechopped
Canola oil2 tbsp
Chipotle mayoas needed
Garlic powderto taste
Green onion1/2 bunchsliced thinly
BAM spiceto taste
Yellow pepper2 mediumchopped
Cheddar cheeseto tasteshredded

  1. Toss potatoes with salt and garlic powder and microwave for 5 - 7 minutes
  2. Toss with oil and bake for 20-25 minutes at 400 F and broil for 3 - 4 minutes (do not toss/flip in between)
  3. In the meantime, fry onion for 5 minutes
  4. Add chorizo and cook until the mixture changes color; add peppers and BAM spice
  5. Make Chipotle mayo
  6. Fill tacos with chorizo mix, top with Chipotle aioli, and garnish with green onion and cheese

Salt only needed only for potatoes. There's enough salt in chorizo and mayo for the rest of the dish.
