Chorizo Tacos

Serves: 4 
Calories: 550/serving (not including tortillas)
Red potatoes1.5 lbscooked and cooled
Chorizo12 oztrader joe's
Onion1 largechopped
Canola oil1/4 cup
Mayo2 tbsp
Garlic powderto taste
Green onion1/2 bunchsliced thinly
BAM spiceto taste
Yellow pepper2 mediumchopped
Cheddar cheeseto taste

  1. Cook potatoes in open pot for 20 minutes with salt until completely cooked
  2. Drain and keep aside to cool
  3. Mash with hand or mug, sprinkle salt and cooking spray
  4. Roast in oven for 10 minutes on each side at 450F along with chopped peppers
  5. Fry onion and chorizo for 10 minutes until cooked and browned
  6. Put in sieve over small bowl and drain all oil
  7. Mix the chorizo oil with garlic powder, mayo and enough water to make aioli
  8. Toss potatoes with half aioli, chorizo mix, BAM spice and half green onion
  9. Fill tacos and garnish with aioli, green onion, cheese and hot sauce

Salt only needed only for potatoes. There's enough salt in chorizo and mayo for the rest of the dish.
