Udon Noodle Soup

Serves: 3 - 4 
For Base:
Water8 cups
Flavor packets3
For Mushrooms:
Shiitake mushrooms200 g2 boxes
Maple syrup2 tbsp
Soy sauce4 tbsp
Water5 tbsp
For Toppings:
Carrot1 largeshredded
Green onion1 bunchchopped
Red chili1 largesliced
Bean sproutsfew
  • Cook noodles in water and flavor packets (add chili if using) until done
  • Saute mushrooms in sauce until all the liquid evaporates
  • Ladle noodle soup into bowls and top with mushrooms, carrot, green onion and bean sprouts
