Rosemary Mushroom Pizza

Serves: 1 pizza 
Pizza dough
Garlic5 - 6 cloveschopped
Pecorino cheese1/4 cup or so
Pepperto taste
Heavy cream1/2 cupmore if needed
Mushrooms10 mediumsliced
Saltto tasteif needed
Rosemaryto tastefresh preferred
Mozzarella6 ozshredded
  • Keep pizza dough on counter for 1 hour
  • Roll out into cast iron skillet and leave for 30 minutes
  • Fry mushroom with little salt in small frying pan
  • Take off heat and add rosemary
  • In same pan, fry garlic in olive oil until golden
  • Add cream, stir until bubbling, turn off heat 
  • Add cheese after bubbles stop, don't add when it's too hot
  • After dough has proofed, turn on stove to medium heat
  • After 5 minutes, spread Alfredo sauce and shredded mozzarella cheese
  • Top with fried mushrooms and leave for 10 minutes total
  • Broil skillet on low for 3 - 4 minutes
  • Take pizza out and transfer to cooling rack
Use only whole milk low moisture mozzarella
