Granola

Makes: 16 servings

Rolled oats3 cups
Almonds1/2 cupsub any nut
Peanut butter1/4 cupcreamy
Coconut oil3 tbsp
Salt1/2 tsp
Vanilla extract2 tsp
Cinnamon1 tsp
Maple syrup1/3 cup
Chocolate chipsas neededoptional
Dried fruitas neededused mango
Chia seeds2 tbspoptional
Method:
  • Mix oats, nuts, and cinnamon in large bowl
  • Heat peanut butter and coconut oil on low
  • Add maple syrup, salt, and vanilla 
  • Mix well and turn off heat
  • Add to oats, along with any seeds and dried fruit if using
  • Spread on parchment paper and bake at 325 F for about 30 minutes
  • Allow to cool and add chocolate chips if using
