Makes: One 13 x 13 baking pan

Flour | 10 tbsp | |
Baking soda | 1 tsp | |
Baking powder | 1 tbsp | |
Sugar | 4 tbsp | |
Maple syrup | 2 tbsp | |
Vanilla extract | 1 tsp | |
Oil | 6 tbsp | |
Dates | 200 g | |
Hot water | 200 ml | |
Flax seeds | 2 tbsp | |
Water | 6 tbsp | mix well |
Method:
- Mix dates and hot water and leave aside for 10 minutes
- Mix flax powder and water and chill for 5 - 10 minutes
- Mix dry ingredients - flour, baking soda, and baking powder in large bowl
- Mix wet ingredients - vanilla extract, maple syrup, oil and sugar in small bowl
- Blend dates and water until creamy and smooth
- Make well in the dry ingredients and add wet mixture, flax eggs, and dates
- Line 13 x 13 tray with parchment paper and pour in batter
- Bake at 350 F for 30 minutes, until toothpick test
- Serve warm with cold ice cream
