Sticky Toffee Pudding

Makes: One 13 x 13 baking pan 
Flour10 tbsp
Baking soda1 tsp
Baking powder1 tbsp
Sugar4 tbsp
Maple syrup2 tbsp
Vanilla extract1 tsp
Oil6 tbsp
Dates200 g
Hot water200 ml
Flax seeds2 tbsp
Water6 tbspmix well
  • Mix dates and hot water and leave aside for 10 minutes
  • Mix flax powder and water and chill for 5 - 10 minutes
  • Mix dry ingredients - flour, baking soda, and baking powder in large bowl
  • Mix wet ingredients - vanilla extract, maple syrup, oil and sugar in small bowl
  • Blend dates and water until creamy and smooth
  • Make  well in the dry ingredients and add wet mixture, flax eggs, and dates
  • Line 13 x 13 tray with parchment paper and pour in batter
  • Bake at 350 F for 30 minutes, until toothpick test
  • Serve warm with cold ice cream
