Makes enough for Skillet Lasagna

Ingredients	Qty	Prep
Sun-dried tomato	1 package
Olive oil	as needed
Garlic	2 cloves	chopped
Basil leaves	handful
Salt	as needed
Sugar	as needed	to taste

Chickpea Bowl

Serves: 2 Ingredients Qty Prep Basmati rice 2/3 cup Bouillon paste 1.5 tsp Water 1.5 cups Turmeric 1/4 tsp Chickpea 13 oz can drained Carrots 3 medium sliced Roasted red pepper 2.5 oz Green onion 1/2 bunch chopped Cumin powder 1 tsp Red chili powder 1/2 tsp Cinnamon powder 1/4 tsp Nutmeg powder 1/4 tsp Pepper to taste as needed Pistachios 1 oz Yogurt as needed Smoked paprika to taste Cardamom powder to taste Feta cheese to taste as needed Method: Bring rice, bouillon paste, turmeric, and water to a boil in a pot and cook until water is level with the rice Turn heat to low and cover with lid for 10 minutes. Turn off heat and set aside Place washed chickpeas in a bowl and toss with spice powders (red chili, cumin, cinnamon, nutmeg, and pepper) and 1 tsp oil Saute chickpeas on medium heat in a cast iron pan until lightly browned and a few start cracking. Preheat oven to 425 F Spread the chickpeas and roasted red peppers on a lightly oiled baking sheet Slice carrots on the bias and toss

Avocado Beans on Toast

Serves: 2 (dinner) or 4 (snack) Ingredients Qty Prep Bread 6 slices toasted Avocado 2 small sliced Corn 1 cup Chili flakes as needed garnish Black sesame as needed garnish For bean spread Cannelini beans 1 can sub butter/white Maple syrup 1 tsp Black pepper 1/4 tsp Onion powder 1/2 tsp Garlic powder 1/2 tsp Chipotle sauce 1.5 tbsp Salt 1/2 tsp grind to paste Method : Grind the beans and spices into a paste, it's ok if a few beans show through Toast the bread until crispy Toast the corn with little oil until it has golden brown spots Spread the bean paste, garnish with avocado, chili flakes, corn, sesame, and green onion/shredded cheese Notes: Try to use hearty bread like rye or sourdough that will stay crispy. Can add sweet onion, chips, or tortilla strips for crunch.

Roasted Peppers

Ingredients Qty Prep Peppers 3 - 4 large Oil as needed for baking Method: Preheat oven to 425 (convection) or 450 F Slice peppers in half and discard stem, seeds, and membrane Place them on a lightly oiled baking sheet (skip oil if using foil or parchment paper), cut side down. Don't crowd the pan, each piece should be separate Roast the peppers for 15 - 20 minutes or until the skin turns black or collapses Remove peppers from oven and place in a covered bowl After peppers have cooled down enough to handle, peel the skin (it should slide easily) Chop the roasted peppers and use in any recipe (salad, sauce, pesto, etc.) Can also fill an ice cube tray and freeze them overnight. Transfer to a freezer safe box/bag for later use Notes: This method works for many types of peppers including Anaheim, Poblano, Jalapenos, etc. Most commonly used to prep red peppers for various dishes
