Makes: 4 servings
Method:
- Place the sliced onions in cold water for 10 minutes
- Toast the pecans until fragrant and crumble into small pieces by hand
- Mix dressing ingredients in a glass jar and shake well
- Crumble the feta cheese in a bowl
- Mix the spinach, strawberries, and onions in a bowl
- Toss with the dressing, then add pecans and feta. Serve immediately
Notes:
Can use any spring greens with a mix of spinach. Sub maple syrup if you don't have honey and sweet onions if you don't have red ones on hand. Sweet onions don't need to soak in water. Do not store dressed salad, can keep undressed salad + dressing in the fridge to use the next day.
