For Fajitas:
Corn tortillas8
Green/Red peppers2-3julienne
Portobello mushrooms4remove stem & gills; julienne
Pinto/Black Beans1/4 lbcooked and salted
Red onion1julienne
For Marinade:
Olive oil2 tbsp
Lemon juice2-3 tbsp
Cumin powder2 tsp
Coriander powder2 tsp
Red chili powder1/2 tsp
Jalapeno1minced finely
Saltto taste
Pepperto taste


Method:
  1. Toss vegetables in the marinade and keep for 30 minutes
  2. Roast at 350F for 30 minutes and fill inside warm tortillas, along with cooked beans
  3. Spread Guacamole/Pico De Gallo/Salsa Verde on veggies; sprinkle feta cheese on top
  4. Fold and eat!
