| Portobello mushrooms | 4 | remove stem & gills; julienne |
| Pinto/Black Beans | 1/4 lb | cooked and salted |

| For Marinade: | ||
| Olive oil | 2 tbsp | |
| Lemon juice | 2-3 tbsp | |
| Cumin powder | 2 tsp | |

- Toss vegetables in the marinade and keep for 30 minutes
- Roast at 350F for 30 minutes and fill inside warm tortillas, along with cooked beans
- Spread Guacamole/Pico De Gallo/Salsa Verde on veggies; sprinkle feta cheese on top
