Vegetable Saagu

Cauliflower1/3 jumbocut in florets
Carrot2 mediumdiced
Beans1 cup1/2 in pieces
Peas1 cup
Onion2 mediumchopped
Tomato2 cupschopped finely
Potato1 largesteam all in microwave
For Paste:
Frozen coconut3/4 cup
Cilantro1/2 bunch
Khus khus2 tsp
Coriander seeds1 tbsp
Green chilis4-5
Cashew1/4 cup
Fried Bengal Gram dal - Chutney pappu2 tbsp
Cumin2 tsp
Pepper1/2 tsp
Cinnamon1 small stick
Cardamom1blend to smooth paste

  1. Fry onion & tomatoes
  2. Add the paste & little water, cook for some time
  3. Add veggies & salt; cook till veggies absorb some flavour
  4. Garnish with cilantro and lemon juice after removing from stove
