Coconut | 3/4 cup | |

Coriander seeds | 2-3 tbsp | dry roast |

Method:
- Slit the bitter gourd vertically and cut into equal thirds or halves. Sprinkle with salt and pressure cook for 3 whistles
- Let cool and remove seeds carefully with spoon
- Grind red chilis, coconut, onion and coriander seeds to paste
- Deep fry the gourds in oil and keep aside
- Mix seeds with paste
- Fry masala in little oil for 10-15 minutes until raw smell disappears
- Stuff gourds with masala using spoon
Notes:
- The coconut onion paste, don't make it too fine. It will take longer to cook. Leave it coarse.
