Bisi Bele Bath

BBB masala powder2 Tbsp+MTR brand
Chilli powderas needed
White wine/Vodkaas neededOptional
Lemon/Lime1Halved
Cilantroas neededChopped
Tempering
Ghee1-2 Tbsp
Mustard seeds1 tsp
Cumin1 tsp
Asafoetida2-3 dashes
Turmeric1/2 tsp
Red chillies2-3 mediumBroken
Curry leaves1-2 stalksTorn

Method:
  1. Pressure-cook rice, dal, and potatoes together with 4 cups water + salt for 2 whistles
  2. Heat oil in a big pot, add onions and cook with a little salt till they turn translucent and soft
  3. Add tomato paste and cook till it turns brick red. Deglaze with wine/vodka/water in between to prevent burning
  4. Meanwhile microwave carrots, beans, and peas with salt
  5. Microwave cauliflower separately with salt
  6. Add diced tomatoes, cilantro stems, BBB masala, chilli powder, salt to the pot and cook for a few minutes. It should taste way too spicy and salty at this point.
  7. Add cooked veggies, rice-dal mix, and 3+ cups water to the pot and mix
  8. Taste and adjust spice powders, salt and lemon juice
  9. Make tempering on the side and add to the pot and mix. Garnish with cilantro leaves
  10. Serve with boondi/chips & Raita
Notes:
  • 2 cups frozen mixed veggies can be subbed for fresh carrot/beans/peas
  • Optionally, start with the tempering in the big pot instead of adding it at the end
