Bitter Gourd Powder

Bitter gourd8-10grated & salted
Onion1chopped
For Paste:
Coriander seeds1-2 tbsp
Dry coconut3/4 cup
Red chilies5
Tamarind5+ tbsp 
Saltto taste
Brown sugar3+ tsp
Garlic5-6 clovesblend to paste

Method:

  1. Squeeze excess water from the bitter gourd 
  2. Spread on baking sheet and roast at 350F for at least 30 minutes
  3. Fry onion, paste and roasted bitter gourd for 5-10 minutes in little oil
  4. Adjust tamarind, chili powder, salt, and sugar to taste
  5. Return mixture to baking sheet and roast for 15-20 minutes until completely cooked and dry
