| Dry coconut | 3/4 cup | |

| Tamarind | 5+ tbsp | |

| Brown sugar | 3+ tsp | |
| Garlic | 5-6 cloves | blend to paste |
Method:
- Squeeze excess water from the bitter gourd
- Spread on baking sheet and roast at 350F for at least 30 minutes
- Fry onion, paste and roasted bitter gourd for 5-10 minutes in little oil
- Adjust tamarind, chili powder, salt, and sugar to taste
- Return mixture to baking sheet and roast for 15-20 minutes until completely cooked and dry
