Carrot Soup

Serves: 4 

Carrots2 lbschopped
Onion1 largechopped
Ginger1 tbspminced
Garlic1 tbspminced
Potato1 mediumchopped
Saltto taste
Pepperto taste
Wateras needed
Olive oilfor frying
Smoked paprikato taste

  1. Fry onion in olive oil until it caramelizes
  2. Add the ginger and garlic, fry for a minute
  3. Add the carrots and potatoes, continue cooking until they are soft
  4. Puree everything to desired consistency after cooling
  5. Adjust salt and pepper to taste
