| Quinoa | 1.5 cups | cooked with 2x water |
| Onion | 2 medium | diced |
| Carrot | 2 medium | chopped |
| Corn | 1 cup | |
| Beans | 1 cup | chopped |
| Mushrooms | 2 cups | sliced |
| Salt | to taste | |
| Pepper | to taste | |
| Soy sauce | to taste | |
| Vinegar | to taste | |
| Garlic | 3 large cloves | minced |
| Green chili | 1-2 small | minced |
| Sambal olek/Sriracha | to taste | optional |
Method:
- Fry onions and garlic until transparent
- Add vegetables, salt, pepper and all spices
- Mix the cooked quinoa and adjust salt to taste
