Fennel seeds | few | dry roast |

Curry leaves | few | dry roast |
Fenugreek seeds | 1/16 tsp | dry roast |
Sambar powder | 1/2 tsp | optional |

Method:
- Roast the fennel, cumin, fenugreek seeds with curry leaves, red chili and urad dal
- Grind into powder
- Fry the onion, garlic and tomatoes in oil till soft
- Blend with the spice powder, salt, sambar powder and little water (if needed)
- Fry indian seasoning and transfer contents to the wok
- Cook on medium heat for 10 minutes
