Pani Puri/Golgappa

Sweet chutney3-4 tbspstore bought
For Mint Chutney:
Mint leaves20%
Cilantro leaves80%
Gingersmall piece
Green chilis4-5 medium
For Stuffing:
Potato1 largeboiled and mashed
Onion1/2 largeminced
Peas1/4 cup
Saltto taste
Chat masalato taste
Lemon juiceto taste
Red chili powderto taste

  1. Grind chutney ingredients together into smooth paste and dilute with water and salt to required amount
  2. Mix the stuffing ingredients together and adjust to taste
  3. Make holes in the puris, fill with stuffing and sweet chutney
  4. Serve with a glass/bowl of pani on the side

Making sweet chutney from scratch requires making it a day in advance. It's easier to use store bought chutney, provided it has both dates and tamarind in the ingredient list.
