| Sweet chutney | 3-4 tbsp | store bought |
| For Mint Chutney: | ||
| Mint leaves | 20% | |
| Cilantro leaves | 80% | |
| Ginger | small piece | |
| Green chilis | 4-5 medium | |
| For Stuffing: | ||
| Potato | 1 large | boiled and mashed |
| Onion | 1/2 large | minced |
| Peas | 1/4 cup | |
| Salt | to taste | |
| Chat masala | to taste | |
| Lemon juice | to taste | |
| Red chili powder | to taste |
Method:
- Grind chutney ingredients together into smooth paste and dilute with water and salt to required amount
- Mix the stuffing ingredients together and adjust to taste
- Make holes in the puris, fill with stuffing and sweet chutney
- Serve with a glass/bowl of pani on the side
Notes:
Making sweet chutney from scratch requires making it a day in advance. It's easier to use store bought chutney, provided it has both dates and tamarind in the ingredient list.
