| Basmati rice | 1.5 cups | cooked |
| Green beans | 20 – 30 | chopped |
| Onion | 2 medium | chopped |
| Red pepper | 1 large | chopped |
| Garlic | 2 large | minced |
| Salt | to taste | |
| Roasted peanuts | 4 tbsp | chopped |
| For the sauce: | ||
| Red curry paste | 2 tbsp | |
| Soy sauce | 4 tbsp | |
| Water | 4 tbsp | mix well |
Method:
- Fry onion and garlic
- Add beans with salt and cook until slightly crunchy
- Add red pepper and sauce, cook on high heat until vegetables are done
- Mix well with rice and garnish with roasted peanuts
