Quickie Red Curry Fried Rice

Serves: 4

Basmati rice1.5 cupscooked
Green beans20 – 30chopped
Onion2 mediumchopped
Red pepper1 large chopped
Garlic2 largeminced
Saltto taste
Roasted peanuts4 tbspchopped
For the sauce:
Red curry paste2 tbsp
Soy sauce4 tbsp
Water4 tbspmix well
Method:
  • Fry onion and garlic 
  • Add beans with salt and cook until slightly crunchy
  • Add red pepper and sauce, cook on high heat until vegetables are done
  • Mix well with rice and garnish with roasted peanuts
