Quickie Red Curry Fried Rice

Basmati rice1.5 cupscooked and cooled
Green beans20 – 30chop in 1" pieces
Onion2 mediumchopped
Red pepper1 large chopped
Garlic2 largeminced
Saltto taste
Roasted peanuts4 tbspchopped
For the sauce:
Red curry paste2 tbsp
Soy sauce4 tbsp
Water4 tbspmix well

  1. Fry onion and garlic 
  2. Add beans with salt and cook until slightly crunchy
  3. Add red pepper and sauce, cook on high heat until vegetables are done
  4. Mix well with rice and garnish with roasted peanuts
